Mix the flours with curd and water to make a batter overnight. Keep all veggies cut and ready in the fridge. Cut some cabbage leaves into heart shape for topping

Mix in veggies, chilli ginger paste, salt and chilli flakes to the batter. Put drops of oil in each section of mini uttapam tawa. Pour batter, sprinkle chilli flakes and place a cabbage heart on each omelette

Put drops of oil on each cabbage heart to make it crispy and to give a burnt effet

Turn omlettes when one side is done. Cook other side well until the cabbage heart is crispy

Cabbage should get grill marks

Serve wth ketchup and begin everyone's day with a smile
