Start the day right with a hearty Indian style masala omelette that is quick and easy to make. Moist eggs loaded with vegetables and spices. #bfday1

Heat a tbsp of oil and a tbsp of butter. Allow the butter to melt.

Add the chopped garlic and ginger and saute until translucent.

Add the chopped onions, tomatoes, bell peppers, green chillies, and mix. Cook until the vegetables soften a bit.

Add in red chilli powder, jeera powder, dhania powder, garam masala, and salt to taste.

Whisk the eggs in a bowl. Add in the chopped coriander leaves and mix.

Flatten the vegetable mixture in the pan and pour the eggs over it. Gently mix the eggs. Cover it with a lid and let it cook till done.

The Spicy Masala Omelette is ready to serve. Serve it toasted bread and tomato ketchup.
