Soda bread with cheese and spring onions

During the first UK lockdown it was nigh on impossible to buy yeast to make bread. Many turned to sour dough as a way of baking delicious homemade bread but I looked to my Irish roots and found that soda bread needed only baking soda and was super quick to make. This recipe from Sainsbury's is now an absolute favourite in our house.

Mix the flour, baking soda and salt in a bowl

Grate the cheddar cheese and mix in with the dry ingredients.

Chop the spring onions and mix into the dry ingredients.

Mix the milk and yogurt together in a jug.

Make a well in the dry ingredients and pour in the yogurt & milk mix.

Oil your hands and then get your hands into the mix and bring it together into a nice round ball. You don't need to knead this bread just bring it together.

Put the ball on a non-stick baking tray or baking paper.

Using a knife make 2 deep cuts across the loaf - almost cutting all the way through.

Wet the top of the loaf with a little milk.

Put the loaf into an oven at 170 degrees Celsius (fan) for around 35 minutes.

Let the loaf cool and then enjoy.
