To avoid leftover ingredients after Tet, I used up some spare pork ribs, kohlrabi, and carrots to make a delicious pot of pasta soup.

To avoid leftover ingredients after Tet, I used up some spare pork ribs, kohlrabi, and carrots to make a delicious pot of pasta soup.

Peel and cut the carrots and kohlrabi into chunks, including the tender kohlrabi leaves. Add the chicken broth and pork ribs to a pot and simmer until the ribs are tender. Once the ribs are cooked, add the kohlrabi and carrots and continue to cook. Boil the pasta until tender, then drain and rinse with cold water.

Finally, season the soup to taste, then add the pasta and enoki mushrooms to the pot. Let the soup boil for a few more minutes, then turn off the heat and add green onions, cilantro, and black pepper.
