This is a very traditional and flexible recipe from my family. A simple Go-to weeknight dinner dish. Using the steam to cook the noodles is the key. Controlling the water amount can be tricky, but you will be a master after a couple of tries.
Cooking Instructions
- 1
Remove the heads of the green beans and cut into smaller pieces.
- 2
Heat up a pan and add olive oil and sugar. When sugar is melt, add pork and stir frequently on medium heat until all the pork are cooked to golden crispy outside.
- 3
On a separate pot, add enough water to cook the soba noodles. Boil the water. Add the noodles and cook for 1 minute. Take the noodles out and set aside for later.
- 4
Mince the garlic.
- 5
Add the chopped onion and garlic to the pan. Cook till the onion is translucent.
- 6
Add green beans to the pan, then add water halfway to the surface of the green beans. Lightly place the noodles on top of the green beans. (DO NOT STIR.) Put the lid on and cook on high heat for 7 minutes.
- 7
Remove the lid. If there is still too much water left in the pan, continue cooking on high heat until excessive water is vaporized. If not, turn off the heat and add white rice vinegar and salt. Mix well.

Soba Noodles With Pork and Green Onion Soba Noodles With Pork and Green Onion
My mother taught me to wash soba noodles very very well. This is a "kamo-seiro" using pork instead of the traditional duck.By putting the mentsuyu sauce in the frying pan after stir frying the pork, you can make even store-bought store rather rich-tasting. Even if you grate ginger and garlic, the strength of their flavor will dissipate somewhat by the time you eat the dish, so there isn't much worry about the two ingredients overpowering everything else. I recommend finely chopping both. Wash the soba noodles well by rubbing the noodles with your hands under running water, to remove any surface stickiness. For 1 serving. Cold Soba Noodles with Soy Milk Sauce Cold Soba Noodles with Soy Milk Sauce
I won a contest to become a tester for a brand of mentsuyu, so I tried making this. There's soy milk miso soup, so I thought that soy milk soba dipping sauce should work too - and it was delicious! I thought I'd try milk first, but that has a character that doesn't really go well with this. I think that soy milk just goes better with Japanese ingredients. I don't have special bamboo plates for cold soba, so I just used a sushi rolling mat under the soba noodles and used tea cups as dipping cups... I apologize for the makeshift arrangement.Make with soy milk and not milk! Recipe by ochikeron cookpad.japan
