Chop the garlic, green chillies and onions.

In a pan, heat oil. Add mustard seeds and cumin seeds. When they start to crackle add hing, garlic and green chillies. Saute for a min on low flame without burning. Now add onions and cook till it turns translucent.

Add haldi powder and red chilli powder. Add gram flour(besan) and roast it dry till it starts giving roasted aroma. It takes nearly five minutes.

Now add water sprinkling little by little making the mixture wet. Slowly add water, sprinkling little by little as the gram flour should look wet but not runny. Cover and simmer for five more minutes. Zhunka is ready.

For Bhakri, take flour and add salt. Knead the dough well with little lukewarm water.

Roll out a chapati with the dough. Heat tawa, place the roti and make jowari rotis.

Cut bhakari into half..Open up and place Zhunka in between the roti. Serve hot with thecha and sirka wali pyaz.
