Snakegourd helps in detoxification of the kidneys , helps in weight loss and keeps you hydrated. This vegetable has many more benefits ,vitamins and nutrients.Here I have made this vegetable in South Indian style.
Steps

Firstly take the vegetables and keep ready

Peel the snake-gourd and deseed them. Similarly peel the carrots, wash both the vegetables and cut into small cubes.

Then cut the onion and garlic roughly and then put it in a mixer jar along with the dry red chillies and grind it

Heat a Kadhai and put oil and when hot add mustard seeds and after it splutters add curry leaves

Then add the ground onion red chilly paste and sauté well for 2 to 3 minutes.

Then add the dry spices and salt and fry well again.

Add the chopped vegetables and mix everything well. Add water, mix again and cook it covered on low flame for a few minutes. Keep checking in between.

When done turn off the heat and serve hot with rice and dal.
