Combine all Shrimp boil seasoning ingredients together in a grinder except for the bay leaves and grind to a powder

Remove shrimp heads, cut along back shell with a sharp knife and remove and discard digestive tract. Leave remaining tail, shell and legs on

In a large stockpot bring 2 litres of water to a boil with plenty of space at the top

Once at a rolling boil, add the shrimp boil seasoning including whole bay leaves. It should boil fiercely for a few moments before settling down.

Slice one lemon in half, squeeze both halves into the water and then throw the rest in the pot. Do the same with just one half of the orange, reserving the other for later. Half the onion and garlic and add to the pot

Once the pot has returned to a rolling boil add the potatoes and allow to simmer for 12-14 minutes

When the potatoes are soft add the kielbasa and corn and allow to boil for 5 minutes

Heat butter and crushed garlic clove gently over a low heat

After 5 minutes, or after the pot has return to a boil, turn off the heat and add the shrimp. Set a timer to 5 minutes

After 5 minutes, pour the boil through a colander in the sink and onto a lined table

Squeeze the lemon and remaining half orange over the seafood

Sprinkle over some of the spice topping and use the garlic butter to dip your seafood into
