Ingredients: 1 cup big diced pineapple (i use fresh one but you can use tin); 1 onion, chopped; 1 red pepper, chopped; 1/2 cup babycorn, cut diagonally in half; 1 handful broccoli, cut into bite size; 1/2 cup Toasted cashew nut; 1 pack tempeh, cut into bite size (you can use tofu as well); 1 tbsp vegetable cooking oil; 1 tbsp finely chopped garlic; 2 tbsp sweet chilli sauce; 1 tbsp oyster sauce (take it out for vegan option); 1 tbsp tomato katchup; 1 tbsp soysauce; 1 tbsp maple syrup; Pinch salt and pepper; 1 tbsp cornflour; 2-3 tbsp water

1 cupbig diced pineapple (i use fresh one but you can use tin)

2 tbspsweet chilli sauce
1 tbspoyster sauce (take it out for vegan option)
1 tbsptomato katchup
1 tbspsoysauce
1 tbspmaple syrup
Pinchsalt and pepper
1 tbspcornflour
2-3 tbspwater

Add vegetable oil and garlic, fry until golden and crisp. Add tempeh and quick fry.

Mix the sweet and sour sauce in a mixing bowl. Leave it aside

Add your vegetable in and quick stir. The. Add pineapple and mix well.

Add sweet and sour sauce in and stir it quickly until the sauce thicken up. Add a splash of water if sauce too thick. Then add cashew nut and mix well. Serve with rice. I use pineapple as a bowl to serve my sweet and sour dish🙂.
