L'alapan' Balinese Fried Chicken

Bali is a country that doesn't eat pork and/or beef because of religious beliefs. This lalapan is a local specialty. A lot of food vendors sell this. I think I've almost replicated the quality.

Before frying the chicken, dry off the excess moisture with a paper towel.
The chicken will burn easily when you scoop the oil over the top, so be careful about the temperature of the flame. It's best to patiently fry it over a medium-low heat. Recipe by *chifon*

Ingredients

1 serving
  1. 150 gramsChicken thigh meat
  2. 1 tspSalt
  3. 1 tbspeach Vinegar, sake
  4. 2 tbspA. Canned tomato
  5. 1 tbspeach A. Sake, mirin, mentsuyu
  6. 1 tspeach A. Sugar, chili sauce (or doubanjiang)
  7. 1Vegetable oil

Steps

  1. 1

    Quickly boil the chicken until the surface changes color.

    Cut notches into the center of the chicken from Step 1. Sprinkle salt on both sides and season with vinegar and sake.

    Add a large amount oil to a frying pan. Place the chicken in the pan with the skin side down and fry as you scoop the oil over the top of the chicken. Cut into pieces once the chicken is arranged on a plate.

    Combine the A. ingredients and microwave for 1 minute. Spread the sauce on a plate and place the chicken on top. It's done.
