My dad's favourite meal that he always asks my mum to make for anniversaries and birthdays. I learnt the recipe from my mum. Usually served with cous cous or potatoes, and some green vegetable or salad.

My dad's favourite meal that he always asks my mum to make for anniversaries and birthdays. I learnt the recipe from my mum. Usually served with cous cous or potatoes, and some green vegetable or salad.

Slice the onions into 1cm width rings

Stab the chicken skin in multiple places with a fork
- 3
Rub the salt, pepper, paprika and thyme into the chicken
- 4
Just before frying, cover the chicken in a light layer of plain flour
- 5
Fry the chicken skin side down first in a frying pan
- 6
Once the skin is crispy, take the chicken out of the pan
- 7
Layer the onions into the frying pan, then return the chicken to the pan on top, skin side up this time

Add the sauce ingredients to the pan and simmer with the lid on until the onions are soft and the chicken is cooked through

Optional: add some green vegetable like tenderstem broccoli in the final 5 minutes of cooking
