We grow oyster mushrooms and yellow and white chanterelles in windowboxes on sawdust with potting soil and leftover coffee grinds. You can grow chanterelles indoors by just planting a dried chanterelle mushroom cap in potting soil. The spores from adult mushrooms seed the new crop for free, year round. We dry mushrooms to keep as meat substitutes for vegan dinner guests: oyster, chanterelle, shiitake, woodear and black mushrooms. Lay fresh mushrooms on steamer or other grate under air blower in fridge or airfryer, one week or less to dry till leathery, ready to pack.

Reconstituted dried mushrooms in warm water taste just like fresh mushrooms. Taste best when large ones are halved top to bottom and sauteed medium heat in lots of cashew butter in a cast iron skillet. We then finish them coated in whipped egg white substitute and sauteed another minute.

Instead of beaten eggwhite, we save the cooking liquid from beans, called aquafaba, whipped into egg white substitute and dip the finished sauteed mushrooms in this eggwite, then sauteed a minute in cashew butter, and serve. Delicious.
