Peel the garlic, add the spices to the vinegar water and boil. Let the sugar and salt dissolve. Lower the heat.

Slice the carrots and vegetables. Add to the pot. Simmer for 12 minutes, and turn off heat then cover. Let it rest in the pot for 12 minutes. If the celery was limp it will be firm now.

Add the vegetables to the jars and lightly pack it in each one. Add the liquids in the jars not quite to the top of the vegetables. I had 5 jars. So I divided the olive oil and honey into each jar, about half a teaspoon of the olive oil and half a teaspoon of honey to each jar. Then top off with more of the pickling solution. Add lid. Put into the refrigerator if using within a week if not, can it in a water bath. I hope you enjoy!!!
