380 gramsdried spaghetti
600 gramsmushrooms
400 gramscan diced tomatoes
2 clovesgarliced, diced
salt and fresh ground pepper
chopped flat-leaf parsley
2 tablespoonsolive oil

Bring a large pot of water to boil. Add a tablespoon of salt and a splash of oil. Cook the pasta according to the packet directions or until al dente. Drain and return to the pan.

Heat the oil in a large, heavy-based saucepan over low-medium heat. Add the garlic, and saute until softened. Add parsley 🌿. Add the mushrooms and mix until combined. Gently simmer for 10-15 minutes or until softened. Season with salt and pepper.

Transfer pasta to the pan with mushrooms and toss to combine.
