Measure and chop all the ingredients for the recipe. In a large pot, heat the oil and brown the beef. At first, the beef will release liquid. Let the liquid evaporate so the beef can brown. Add the onion and garlic, and sauté until golden. Add the cumin, black pepper, paprika, and oregano, and cook for 1 minute.

Pour in the water, add the beef bouillon cubes, salt, and brown rice. Bring to a boil, then reduce the heat and simmer for 25 minutes.

Add the potatoes, carrots, squash, and corn. Cook for 10 minutes. Add the green beans and peas, and cook for 5 more minutes. Serve the soup topped with a little chopped cilantro. Note: If using regular white rice, add it at the same time as the potatoes, carrots, squash, and corn.
