Blue Kheer is a simple Kheer with a twist which I love to make ..Rice cooked in milk with vanilla flavor and Butterfly pea flower.
(The cooking time doesn't include cooling and chilling time )
Note:* you can use condensed milk instead of sugar also if you wish ...in that case 170 GMs of condensed milk is enough the sweetness in both the cases are just enough...it's not very sweet.

Take 2 tbsp each of dried Butterfly pea flower in a separate glass tumbler and pour about 3 tbsps hot water in each tumbler and let the flower steep (and release it's color) for at least 1 hour or more and strain and add to the kheer while it's cooking.

Wash and soak the rice for half an hour.
Boil the milk and add the rice and the first batch of blue tea. cook for almost half an hour till the rice gets cooked, meanwhile add the vanilla extract too. Keep stirring frequently. Once the rice gets cooked add the sugar and second batch of blue tea and cook for another 10 minutes or so till the kheer thickens to the desired consistency. Pour it in the serving bowl, cool and chill. Garnish it with almond, pista etc. Serve chilled!!!
