Macrobiotic: Simmered Sweet Potato & Apple

Apple simmered in salt is a macrobiotic recipe, but adding sweet potato makes it taste like sweet chestnut paste. If you have time, simmering the apple well makes it soft right down to the core. The core is basically just a ball of energy.
It's simply a salt simmer, but you'll be surprised by it's sweetness. When simmering the apple, if you use too much water it'll take a long time so be moderate with the amount. If it doesn't seem like enough, add a little at a time. If you don't have any Jonathan apples, Fuji apples are okay, but it may be a bit lacking in acidity so add a bit of lemon. Cut the apple into 8 slices without peeling it, then cut into wedges. Combine with the core, water, and salt in a pot. Simmer until soft. This should take about 25-30 minutes.

While that's going on cut the sweet potato into slices, sprinkle with a bit of salt, and steam for about 20 minutes.

Once the sweet potato has finished steaming, remove the peel. Cut into cubes to make it easier to smash.

Place the sweet potato on top of the apple and simmer for about 10 minutes. After they've simmered together use a wooden spatula to mash them. It should resemble sweet chestnut paste.
