Spinatknödel with Parmesan (Spinach Dumpling)

In Europe there are so many different version of dumplings. I tried the German version when I was there on holiday a few years ago. They are massive and are made with different ingredients.
I recently saw Spinatknödel with parmesan on TV when some TV presenters did a journey to Austria. They reminded me of the German dumpling I had.
The dumplings look so appealing and I am also a huge fan of spinach. As well as sprinkling the dumplings at the end with fresh chives and a generous grating of Parmesan cheese.
I wanted to learn how to make this dish as it reminds me of eating traditional food in Europe.

To make the dough, in a pan add the butter and onions on the medium heat sauté until golden brown. Then add the garlic and cook for for 2 minutes. Once cooked turn off heat and set aside.

Then either cut the bread rolls into cubes or place in a food processor and quickly break it up and transfer into large mixing bowl. In a saucepan or in the microwave heat up the milk until warm, pour over the bread rolls and season the mixture with salt and nutmeg. Add the eggs and let it soak in for a few minutes.

Now using your hands gently mix the mixture together. Make a dough with your hands until the ingredients are fully combined together, cover bowl with a clean tea towel and set aside for about 15 minutes.

Add the spinach to the mixture. As well as the butter, onion and garlic mixture to the dough. Mix all of the ingredients together and knead well. Allow the dough to rest for between 20-30 minutes.

After the time check to see if the dough consistency is right. Try to form the mixture into balls. Tip: if they hold together, its ready to use. However if the dough is too soft and doesn’t hold together, add some more breadcrumbs. Or if the dough is too dry, add more milk or eggs.

Using your hands, wet them first and then begin forming the dumpling mixture into balls (the size of tennis balls). Transfer onto a plate and repeat until all of the mixture has been used.

To cook the dumplings, in a large pot or saucepan over high heat, add water and once boiling add salt (you want the water to be salty). Once boiling reduce the heat. You want to simmer the dumplings and not boil them. Let the dumplings simmer, leaving them uncovered for about 15-20 minutes. Ensure you keep an eye on it and ensure the water doesn't boil.

In the meantime, to make the brown butter on medium heat, heat the butter in a pan until lightly brown whisking frequently. Once melted it will begin to foam up a bit and then fades. Keep watching carefully as lightly browned specks begin to form at the bottom of the pan. The butter should have a nutty aroma.

To serve drizzle dumplings with melted brown butter on top, sprinkle with grated Parmesan and chives.
