Ingredients

  1. 2medium zucchini, coarsely grated
  2. 1/2onion, finely diced
  3. 1egg, beaten
  4. 75 gwholemeal flour
  5. Salt & pepper to taste
  6. 100 gGreek Yoghurt (topping)
  7. 1spring onion, sliced (topping)

Cooking Instructions

  1. 1

    Combine main ingredients in a bowl and mix well

  2. 2

    Put a frypan on medium heat & lightly spray with oil

  3. 3

    Drop spoonfuls of mixture onto frypan & press down to form pancakes

  4. 4

    Cool on both sides until browned & cooked through

  5. 5

    Plate up & serve with Greek yoghurt and sliced spring onion
