In a saucepan, combine the milk, cinnamon sticks, lemon peel, and orange peel. Heat over medium, stirring occasionally, and let everything infuse for at least 1 hour. After that, remove from heat and let cool.

Preheat the oven to 320°F (160°C), using both top and bottom heat if possible.

Beat the eggs and set aside. Slice the bread into pieces about 2 inches (5 cm) thick. Soak the slices in the milk mixture for a few minutes on each side so they absorb the liquid well. Then dip them in the beaten eggs and place them on a baking sheet. Bake, and when they start to brown on one side, flip them so they cook evenly on the other.

While the bread is baking, mix some granulated sugar with several teaspoons of ground cinnamon to taste. When the torrijas are golden as shown in the photos, remove them from the oven and coat each slice in the cinnamon-sugar mixture. Let them cool slightly, and they’re ready to enjoy! I encourage you to try them because they’re so good.
