Air Fryer Torrijas

Today is Torrija Day and I didn’t want to miss it, so here’s this air fryer version.
With this recipe, you can make two large torrijas in an air fryer. If you want to make more, just multiply the ingredients and cook them in batches of two at a time.
They taste very similar to traditional torrijas but are lower in calories since they’re not fried in oil. If you use erythritol instead of sugar—a sweetener that looks and tastes similar but has no calories—you’ll have a healthier dessert with far fewer calories.
Although they might seem a bit labor-intensive, if you organize yourself well, you can make several batches without much effort.

Place the infused milk ingredients in a saucepan and bring to a boil. Lower the heat and keep it just below boiling for 10 minutes, making sure the milk doesn’t boil over. Let cool, then remove the cinnamon stick and citrus peels, or strain. Set aside.

Pour the cooled milk into a shallow dish. Place the two slices of torrija bread (day-old bread works best), each about 1/2 inch thick, into the milk. Let soak for 5–10 minutes, until soft.

Flip the bread and let soak another 5–10 minutes, until most of the milk is absorbed.

Cut a piece of parchment paper to fit the basket of your air fryer and place it in the basket. Leave the basket out of the air fryer for now.

Beat two eggs in a bowl (you’ll have some left over, but one egg isn’t enough). Set aside.

Carefully lift each milk-soaked bread slice and coat both sides in the beaten egg. Place them in the air fryer basket on top of the parchment paper.

Set the air fryer to 356°F (180°C) for 12 minutes.

Carefully flip the torrijas so they don’t break, then air fry at 356°F (180°C) for another 10 minutes. Remove from the air fryer.

To make the syrup, combine 1/2 cup water (120 ml) and two heaping tablespoons honey in a saucepan. Bring to a boil and cook until slightly thickened, about 10 minutes. Pour into a shallow dish and set aside.

For the topping, mix the sugar and cinnamon together on a plate.

Dip the baked torrijas in the syrup, then coat them in the cinnamon sugar. Place on a serving dish.

Drizzle with any remaining syrup.
