Ingredients

Prep time 15 min,cook time 20 minutes
6-8 servings
  • 3-4boiled potato and mashed
  • 4-5green chillies
  • 4-5garlic cloves
  • 1/2 inch ginger
  • 1 tspmustard seeds
  • 1/4 tspasafoetida
  • 10 curry leaves
  • 1/2 tspturmeric powder
  • 2 tbspcoriander leaves chopped
  • 2 tbspoil
  • to tasteSalt
  • For batter
  • 1 cupgram flour
  • 1/2 tspturmeric powder
  • 1/4 tspred chilli powder
  • to tasteSalt
  • For green chilli fry
  • 4-5green Chillies
  • as neededOil for fry
  • For green chutney
  • 1 bunchcoriander leaves
  • 1/2 bunchmint leaves
  • 4-5garlic cloves
  • 1lemon juice
  • to tasteSalt
  • For dry red chutney
  • 6 tbspdesiccated dry coconut
  • 10-15dry red chilli
  • 2 tbsppeanut
  • 10-12garlic cloves with peel
  • 2 tspKashmiri red chilli powder
  • 1 tspsalt

Steps

Prep time 15 min,cook time 20 minutes
  1. 1

    Heat a pan,add oil,mustard seeds,asafoetida,curry leaves,ginger garlic green chilli (chrushed in grinder make thecha / khucla.) turmeric powder,potato and mix well.now add salt and coriander leaves in the mixture,mix well and keep aside.

    Now for batter in a mixing bowl add gram flour,turmeric powder,red chilli powder and salt to taste and make thick consistency batter with required water.

    Now make medium size balls of potato mixture and dip in Besan batter and fry them till golden brown.
    Fry the slit green chilli.

    For green chutney add all the ingredients in grinder and grind them,chutney is ready.

    For dry red chutney roast all the ingredients one by one,grind them and then add salt and Kashmiri red chilli powder,chutney is ready. (or can see my vada pav chutney recipe

    Now assemble the vada pav by sliced the pav in half apply green chutney inside the pav in both portions then add dry red chutney and place potato dumpling inside the pav,our Mumbai style vada pav is ready to serve,garnish with fry chilli and enjoy.
