Thandai

Traditionally, a North Indian drinks prepared during the summers, especially for Holi and now popular throughout India.
Thandai is usually made using milk, saffron, sugar, dry fruits and sometimes in the case of Bhang Thandai, contains weed as well.
It has a cooling effect on the body and thus the name Thandai.

Steps

Soak Almonds overnight and peel.
Soak Cashew nuts, pistachios, melon seeds and poppy seeds for about 3 hours. - 2
Blend together all the dry fruits to a smooth paste using 3-4 tbsp of warm milk.

In a non-stick vessel, pour and let the milk boil.
Add saffron strands and sugar and mix. Let the sugar melt. - 4
Simultaneously, grind cardamoms, peppercorns and rose petals into a fine powder using a blender or mortar and pestle and keep aside. Make sure to discard the cardamom shells.

Add the smooth paste of dry fruits into the boiling milk and mix until well combined.

Add the ground thandai masala to the milk as well and mix.

Let the thandai cool before refrigerating it.

Garnish with dry fruits and serve chilled.
