
The Lazy Runner Stuffed Mini Peppers

This is an easy quick appetizer or snack that takes minimal cooking skills.
Kayre has been my running and biking buddy for years, and we've been able to hold each other accountable even when not together. Sometimes things don't go as planned, like from workouts to life, and that's when you need a good go-to, quick snack when you need a damn break (and food). I also think this is perfect for Kayre because the vibrant colors of the mini peppers remind me of her vibrant spirit. She's always, ALWAYS, remained positive any time I'm with her, even when I feel like I'm carrying a dark cloud with me. She's consistently lifted my spirits anytime I needed it, even when I wasn't aware I did. These little peppers always give me a good lift when I need it too!
Anyways, this quick and easy recipe also keeps and reheats well for snacks at a later date. I can also mention, they look very fancy, and people always compliment them (don't let anyone else know how easy they really are).

Cut mini peppers in half lengthwise, and scrap out guts.

Pat pepper carcass dry so cheese will stick. You can also salt or add dry seasoning to the dry carcass to help remove extra water and help the cheese stick.

Optional: you can add additional cheese (all the cheese), onions, bacon, or spices and combine with chosen creamy cheese.
My favorite already combined cheeses are: Garlic and herb cream cheese, herb goat cheese, jalapeño cream cheese, the list goes on. Already flavored cheese mixes make my life easier. - 4
Spoon cream cheese into each pepper.

Line baking sheet with non-stick foil. To be sure, lightly spray sheet with non-stick spray.

Put the peppers (pepper side down) on sheet.

Bake at a lower temp (like 350) for longer for softer peppers, or broil for crisp pepper and bubbly cheese or until you're tired of watching. Or air-fry!
I've always done this by eye, but its less than 20 mins to pepper time.
Just keep an eye on your peppers so the cheese doesn't burn, the peppers don't burn or you set a fire. - 8
Remove from oven/air fryer and feel free to top with an extra seasoning, shredded cheese, bacon, bread crumbs, etc.

LET THEM COOL BEFORE YOU TAKE A BITE, less you loose the skin on the roof of your mouth.
