1-2tsps fennel seeds
1/2-1 tspground ginger
1/2 tspsalt
1 tbsprunny honey

Put everything except the honey in a dry frying pan on a medium heat.

Toast until fragrant and the almonds are turning golden brown. Stir regularly so nothing burns.

Take off the heat. Quickly add the honey and stir through. Leave to set.

Break up to snack on or to sprinkle on dishes.
