I got bored of mentsuyu and came up with this as a way to get myself to eat more vegetables.

Since the broth is concentrated, just add 1 or 2 ice cubes rather than chilling it.
The combination of tomato mentsuyu with noodles may not be for everyone.
You can substitute lime, grapefruit juice, or apple vinegar for the lemon juice. Or even with balsamic vinegar. Recipe by food town

Ingredients

1 serving
  1. 1serving Boiled somen noodles
  2. For the tomato mentsuyu broth
  3. 100 mlor more, adjust (to taste) Canned tomatoes or tomato juice
  4. 50 mlor more, adjust (to taste) Mentsuyu
  5. 1 tbspor more Olive oil
  6. 2Shiso leaves or basil leaves
  7. 1 dashGarlic, finely chopped green onions
  8. Seasonings -- to enhance the taste
  9. 1Lemon juice *Refer to Helpful Hints
  10. 1Tabasco sauce
  11. 1Grated cheese

Steps

    Prepare the noodles and toppings: Boil whatever noodles you prefer, such as somen, udon, cellophane noodles, or even tofu. Top with fillings such as tomatoes, cucumbers, soft poached egg, ham, chicken, or grilled veggies.

    The ratio of canned tomatoes to mentsuyu should be 2 to 1. Mix together, then combine with the other herbs. Drop in ice cubes, then use as a dipping sauce for noodles, or serve the noodles in the sauce.

    See "Sunshine Tomato Noodles"for a richer version without mentsuyu using ramen noodles or spaghetti. Serve hot or chilled!
