Macrobiotic: Burdock Root Tazukuri

This is a macrobiotic recipe.
The burdock root will burn right away if too thin. But if the shavings are too thick, they will not become crisp. Let's just say, there's a fine line between too thin and too thick. Recipe by Ruruko

Steps
- 1
Slice the burdock into long, fat shavings. They will burn easily if shaved too thin.
- 2
Pan fry them in oil until crisp. The heat should be high at first, then reduced to low while slowly frying the burdock shavings.
- 3
Increase to high heat to make it easier to drain the oil. Dry roast the walnuts. They burn easily, so be careful.
- 4
At this stage, the burdock can be eaten as chips. They're delicious and addictive!
- 5
Put the seasoning ingredients in a large sauce pan, stirring in the kudzu powder. Use a wooden spatula to make a paste. Mix until it becomes translucent and glossy.
- 6
Add the burdock and walnuts and coat in the kudzu sauce.
