A classic receipe, Bhuggal Chawal is the sindhi delicacy where rice is cooked in whole spices and caramelised onions.. but here instead of onions I have used sugar. No no sugar doesn't make it sweet, it taste spicy and yummy. Here is the reciepe
Bhuggal Chawal without Onion -Sindhi Special
A classic receipe, Bhuggal Chawal is the sindhi delicacy where rice is cooked in whole spices and caramelised onions.. but here instead of onions I have used sugar. No no sugar doesn't make it sweet, it taste spicy and yummy. Here is the reciepe

Wash and soak rice for 20 mins.

Take heavy bottomed vessel. Add oil. Keep all whole garam masalas ready in one bowl. Add oil and sugar. Keep the flame medium. Keep stirring the sugar so that it doesn't form lumps. Stir till it starts getting light brown.

Now add all whole garam masalas and stir well. Now add red chilly powder and stir for 30 secs. Add little water. All this process has to be done quickly otherwise masalas and sugar will get burnt. That's why keep all masalas ready and then start with caramelised process.

Now add rice and required amount of water. Add salt and coriander powder. And garam masala. Cook rice. When water evaporates cover and lower the flame.

Sindhis usually serve this with saibhaji, any sabzi or Raita..
