Ingredients

2 servings
  • 2 cupsmilk (about 480 ml)
  • 8-10almonds
  • 10-12fox nuts (makhana)
  • 7-8cashews
  • 8-10pistachios
  • 1 tablespoonmelon seeds
  • 2 tablespoonspowdered sugar
  • as neededFresh rose petals,
  • as neededDried rose petals,
  • 1/3 teaspoonblack pepper powder
  • 1/4 teaspoongreen cardamom powder
  • 4 strandssaffron
  • 1/2 teaspoonfennel powder (omit for fasting)
  • 1/2 teaspoonpoppy seed powder (omit for fasting)
  • Ice, as needed (optional)

Steps

10 minutes
  1. 1

    Coarsely grind all the nuts, fennel powder, melon seeds, saffron, dried rose petals, and poppy seed powder in a blender to make a mixture. If you are making thandai for fasting, do not add poppy seed or fennel powder. You can also finely chop the nuts and add them to the thandai.

    In a separate bowl, add ice cubes, powdered sugar, and black pepper powder to the milk.

    Add some fresh rose petals. Then churn the milk with a whisk or blend it in a mixer.

    Pour the thandai into serving glasses and garnish with a little more of the thandai mixture on top.

    Your chilled Banaras-style thandai is ready. Serve cold and enjoy!
