Creamy Curd @ Homemade

This is a lovely one that we all do at home at one point of time. We all actually love doing it at home sweet home because nothing beats the taste and texture of anything homemade. So is the setting of sweet Curd that just melts in mouth. Setting of sweet Curd at home is a very lovely experience. It takes just a few tricks to set perfect Curd at home. And if it's done in a clay pot, it's even more better. Once it's ready to set, do not disturb it unnecessarily or shake. After the stipulated time only, it should be checked and then refrigerated. This prevents it from becoming sour. And if you need sour one for Curries and Gravies, you can keep it outside and use it accordingly. If you stay in a cold place, cover the pan with warm towel. Also you can place it in the Rice container in Winters to set well.
It's used for a variety of dishes like Lassi, Biryanis, Pulaos, Raita, Shrikhand, Barbecues, Yoghurt based drinks etc to name a few.

Boil Milk at first. Now let it cool down. It should be warm, to touch and not hot at all. Check by dipping your finger so that you will be rest assured.

In the same bowl, whisk in the Curd culture nicely. It should mix well. It is very important to mix well. Take care about that. Cover and keep aside without any further delay for about 5-6 hours. In Summers, it gets done very quickly. In Winters it might take more time.

Milk should always be boiled and used. If it is very hot, it will coagulate and the Curd will be grainy. If it is little less hotter, the Curd will not be thick. It will be watery. If it's cold, it will not set at all. So maintaining the temperature is important.

As soon as it sets, refrigerate it until use. Enjoy!
