Peel the yam and cut into moderate pieces, wash the yam and boil. 20 - 30 minutes

Cut the waterleaf, wash and sieve. 10 minutes

Remove the boiled yam from water and slice into desirable shape of your choice. 15 minutes

Wash the egg and add the seasonings. 5 minutes

Add the vegetables and whisk. 2 minutes

Place the yam in the whisked egg and fry in hot groundnut oil. 30 minutes

Serve hot

It can be served with vegetable soup or meat/chicken, (if interested).
