I made cute looking Asian sweet potato cakes.

If you want to make it smooth, strain the potatoes. But I think mashing is enough. Cookie cutters with complicated shape are not good for this. You could use only egg yolks for the glaze, but I used a whole egg. Use the leftover eggs for something else. Recipe by Soraironikki

Ingredients

  1. 1 largeAsian sweet potato
  2. 20 grams☆Butter
  3. 50 grams☆Sugar
  4. 1☆Vanilla extract
  5. 1Egg

Steps

    Wash and peel the sweet potato. Wrap with plastic wrap and microwave until soft♪ Place it in a bowl and mash when it's still hot! Quickly add ☆ marked ingredients and combine!

    When everything is nicely mixed, roll out to about 1 cm thick and cut the dough into shapes with cookie cutters. I think a heart shaped cookie cutter is easiest to work with.

    Line a baking sheet with parchment paper and place the cakes on top. Blush the surface with beaten eggs Bake in an 180℃ preheated oven for 20 minutes, and they are done.

    After Step 1, if you shape the potatoes into an ovals and bake in aluminum cup, you'll have regular Asian sweet potato cakes.

  5. 5

    If the potatoes are too dry after microwaving, add 1~ tablespoon(s) of milk and adjust the consistency.
