This is one of my favorite dishes. It's a bit difficult to eat out because of COVID, so I decided to make it at home. It's delicious—homemade always tastes best!

This is one of my favorite dishes. It's a bit difficult to eat out because of COVID, so I decided to make it at home. It's delicious—homemade always tastes best!

Cut the onion and potato into bite-sized pieces. Rinse the chicken thoroughly.

Heat a pan and add the curry paste, onion, and chicken. Stir-fry until the chicken is cooked. Add the peanuts, then pour in the coconut milk, potato, carrot, oyster sauce, soy sauce, and sugar. Simmer for 20-30 minutes.

Reduce to low heat and continue simmering until everything is well combined and the chicken and potatoes are tender. Serve hot. (The longer you simmer, the more flavorful it becomes!)
