A rich dark chocolate brownie with crunchy nuts in every bite.

Roughly chop the dark chocolate.
Take a microwave safe bowl and add butter and chocolate. Heat for 1 minute and mix well until silky smooth. - 2
Crack open the eggs,add vanilla essence and sugar in another bowl and beat with a hand whisk until well combined. Add to the butter and mix well.

Sift the flour, cocoa powder, salt, baking powder and baking soda. Add this in batches to the egg mixture.

Finally add coffee powder and ½ of the chopped nuts and mix gently using cut and fold method. It will be a thick batter.

Grease a tray with butter and dust with flour. Pour and spread the batter evenly. Top with the remaining nuts.

Bake in a preheated oven at 180°C (with only bottom rods on) for 30 to 35 minutes. If you like it fuggy and moist 30 minutes is perfect. If you like it cakey and dry keep for 10 more minutes. Allow to cool completely before cutting into squares.

Serve it with chocolate sauce or ice cream. Usually brownie tastes best the next day. If you like it hot microwave for a minute and enjoy with ice cream.

For an eggless version add ¼ cup thick curd in the place of eggs and ¼ cup milk with 1 tspn vinegar and follow the same procedure.
