Mix 1 tsp sugar, 2 tsp yeast, and 300ml warm milk and leave to rest for 20 minutes.

Mix 1 tsp salt, 500 g flour, and 1 tbsp melted butter. Pour in the yeast mixture and the eggs (keep one yolk aside for garnish). Form dough and leave to rise for 1 hour in a pot oiled at the bottom. Cover the pot.

Separate the dough into sixteen balls. Roll each ball out into a circle. Make sure to leave a mound of dough at the center (edges have to be more flat than center). This will be the 'face' of your bun and puff up nicely when baking.

Add 2-3 teaspoons of fish filling at the center. Fold bottom half of the circle first, and then the other two sides to form a triangle. Pinch corners to properly seal.

Cover all the buns and leave them to rise for 20 minutes. Garnish with the egg yolk.

Pop into preheated oven and bake for 28-30 minutes at 400° Fahrenheit.
