If you're short on time for lunch, this dish is perfect for you. Easy, quick, and very tasty; pasta with cherry tomatoes, olives, and melty mozzarella cheese.

First, bring a large pot of salted water to a boil.

In a nonstick skillet, heat a drizzle of olive oil with 2 garlic cloves for a few minutes.

Once the oil is fragrant, remove the garlic and place the halved cherry tomatoes in the skillet, cut side down. Season with salt and pepper, then add the white wine to deglaze.

When the alcohol has fully evaporated, add 1/2 cup water (about 120 ml) and let the tomatoes soften.

Just before the tomatoes are done, add the olives.

Cook the pasta, drain, and add it to the tomatoes. Add the mozzarella cut into cubes and stir over low heat for a few minutes until melted.

Serve with a few fresh basil leaves and a drizzle of olive oil.
