Soak rice for 5-6 hrs
Grind soaked rice, cooked rice and coconut along with sugar and yeast, required amount of water in batches.
[Instant yeast doesn't need proofing]. Ferment the batter for 8 hours. - 2
Once fermented,mix the batter,add salt,sugar and water.The batter has to be flowy.

Pour a spoon of aapam batter on to a medium hot appam chatti, rotate the pan and spread.cover and simmer till the appam gets cooked well.
serve appam with stew or kadala curry. - 4
