Steps

Put pot roast and 1 cup of broth in slow cooker. Season meat with salt and pepper.

Cook on HIGH for 6 hours or LOW for 9 hours. Remove beef to cool when ready to start the soup.

In a big pot, saute onions in a bit of olive oil. Add everything else except the barley to the pot and bring to a boil.

Chop or shred beef and add to pot. Reduce to a simmer, cover and cook about 25 minutes.

When potatoes are almost done, add barley and simmer another 10 minutes.
