Steps

Take a mixing bowl add 1 cup of semolina & 1/2 cup of maida, salt little.mix it with water by adding little of little. Knead it well until it becomes soft. Now rest it with a wet cloth upto 30 mins.

After 30 mins Knead it once and make a chapathi (do not make it like a thin paper)make a thick chapathi and cut with a round cap/ cutter.

Pour oil in a frying pan let it heat 10 mins in a medium flame after 10 mins put in a low flame. Now fry the puri in oil in a low flame. After removing puri from oil let it cool upto 2 mins then transfer it in a plate it makes crunchy. Do it all in a same way...

Now for preparation of batani firstly you should soak batani upto 5-6 hrs or overnight. Next take soaked batani & wash it gently. Drain out water.

Take a cooker add soaked batani, 1/2 spoon of turmeric and enough water to boil.. cook upto 7-8 vessels (according to your quantity of batani taken)..

Once batani is boiled remove excess water from it. let it cool for 2-3 mins Now take a frying pan add some 3-4 tbsp of oil, chopped tomatoes, and boiled batani mix it well. Now add salt & red chilli powder mix it. Add little water to cook more. Cook upto 15-20 mins close it with a lid. After 15 mins check the batani whether it is perfectly cooked or not. If it didn't cooked keep it in a low flame cook until it becomes perfect smmoth.

Take a mixi jar add 1 full of coriander leaves, pudhina, salt, green chillies,ginger half/ one add some water and grind it a fine paste.

Take a bowl transfer the grinded paste into it. Now add some 1cup tamarind juice to taste, chaat masala, salt if required, add some more water to it, and then squeeze some lemon juice. Check the taste..

All the 3 mixture is ready to eat serve it hot with onions, sev bhujia, curd (optional).
