Roohafza Shrikhand is a creamy & delicious Indian dessert with a refreshing twist by adding rose flavor from Roohafza syrup.

Shrikhand is traditionally made from hung yogurt and sugar with cardamom and saffron for flavoring and dry fruits for crunch. It can be served along with poori or as a dessert after a meal.

Thick & fresh yogurt is hung in a muslin cloth for 4 hours or overnight in the fridge. It is then whisked with powder sugar and other flavorings and garnished with dry fruits. Here I have used Roohafza syrup for flavoring and almonds flakes for garnish.

Collected whey is rich in nutrients and can be used in making roti dough, curry or rice.

  1. 500 mlyoghurt, thick & fresh
  2. 2 tbspRoohafza syrup + for garnish
  3. 2 tspsugar, powdered
  4. As requiredAlmond flakes for garnish

Steps

    Place the muslin cloth on a strainer and place it above a deep bowl. Pour fresh curd onto muslin cloth. Bring the muslin cloth together and tie, gently squeeze out the whey.

    Place a heavy bowl on tied muslin cloth. Place it in the refrigerator for 4 hours or overnight.

    Transfer hung curd to a bowl and whisk until light and fluffy.

    Add in Roohafza syrup, powder sugar, and whisk everything to combine. Refrigerate for 1 hour or until you serve.

    Transfer prepared Shrikhand to a serving bowl. Garnish with Roohafza syrup and almond flakes.

    Serve chill & refreshing Roohafza Shrikhand with hot poori.
