This recipe is super easy and delicious, especially for those who don't like the green taste of vegetables. It's easy to make, looks good, and even my 3-year-old niece loves it.

Scoop out the inside of the eggplant and dice it into small cubes (keep the skin to use as a bowl).

Add a little oil and sauté the canned tuna with the eggplant.

When the eggplant starts to soften and become slightly translucent, add salt and black pepper to taste.

Once seasoned, set aside to cool.

Mix in about 1 tablespoon of mayonnaise.

Place the mixture into the eggplant skin or a baking dish. Sprinkle with cheese powder or diced cheese slices and breadcrumbs (add breadcrumbs last; if you add cheese last, it might burn).

Bake in an oven or air fryer at 320°F (160°C) for 10-15 minutes or until the breadcrumbs turn golden brown.
