Cooking Instructions

Set aside a little cold milk and add the cornstarch. Mix and set aside.

Put the rest of the milk in a pot, add the cinnamon stick and lemon peel, and infuse over low heat until it's about to boil, but don't let it boil.

Meanwhile, separate the egg whites from the yolks and beat the yolks with the sugar.

When the infused milk is ready, add it to the bowl with the egg and sugar, incorporate the cold milk with the cornstarch, and mix well.

Return the mixture to the pot and heat until almost boiling, stirring constantly over low heat to prevent burning.

When it starts to thicken, remove from heat and divide into individual ramekins. Let cool and then refrigerate for two or three hours.

Before serving, sprinkle with sugar and caramelize it with a kitchen torch or a very hot burner.
