The word ‘Biryani’ is derived from the word ‘biryani’ which has its roots in Persia, this particular dish was known to origin in India during the Mughal dynasty and was prepared to serve for the Huge Mughal armies during the war times . As the emperor’s shifted conquering from regions after regions, the flavor of Biryani bengan to transfer & transform,incorporating the local flavours and that is how we have so many regional variations of Biryani in India today. A scrumptious and delicious example of which is this drooling chicken Reshmi Biryani prepared using chicken,rice and burst of chillies and spices which turns out to be so aromatic & inviting while cooking..!
90% of the people are surely biryani lovers as in cooked with their variations and local cooking style.

Ingredients

40-45 minutes prep time:- 2 hours
2-4 servings
  1. For cooking rice :-
  2. 1 kgbasmati rice (India gate)
  3. 1 teaspoonsalt
  4. as neededWater
  5. For Reshmi Chicken gravy :-
  6. 1 kgfresh chicken (cut in 8-12 pieces)
  7. 3onions (big size)
  8. 2 cupsOil for deep frying onions(birista)
  9. 1 cupcoriander leaves
  10. 1 teaspoonginger garlic paste
  11. 1 tablespooncoriander seeds powder (homemade)
  12. 1/2 teaspoonturmeric powder
  13. 2 teaspoonsred chilli powder
  14. 1/2 teaspoonGaram masala powder (homemade)
  15. 1 cupyoghurt (thick Greek)
  16. 2green chilli’s
  17. 1 tablespoonsalt
  18. Pinchorange red food colour
  19. 3 tablespoonsmilk with strands of saffron
  20. as required served with mint Raita

Steps

40-45 minutes prep time:- 2 hours
  1. 1

    Firstly we will prepare coriander seeds powder and set aside further wash chicken well drain the water and marinate the chicken with only spices and green chilli’s for about 2 hours

    Besides wash and soak basmati rice for an hour also soak strands of saffron with milk set aside.further in the marinated chicken add yoghurt and mix well

    By the time we will prepare the birista using chopped onions thinly sliced and deep fried until golden brown it’s perfect colour for Using in Biriyani. Further cook rice 70-80 % with only salt added and drain the water. Once our rice is ready.

    Take a big nonstick wok add a layer of marinated & freezed chicken gravy and add the hot oil from the fried onions like 2-3 ladles then add a layer of rice and few birista and coriander leaves

    Again add second layer of marinated chicken and pop all the rice now garnish it with fried onions,saffron milk, orange red food colour,little more oil and coriander leaves. Cover the lid and cook on high flame for 10 minutes rotating from all sides to cook & steam it evenly further set it on low flame burner for another 15 minutes and off the flame burner. The chicken must be tender and rice must be done. Do check and cook for more 5 minutes if required.

    A perfect treat to you and your family. Just take a serving plate and add spoon full of aromatic and inviting ‘chicken Reshmi biryani’ and relish it.
