Steps

Take rice in a Bowl. Wash thoroughly. Sprinkle 1 Tsp oil on the rice. Mix well. Set aside for 10 minutes. Pour water in the rice. Soak rice in water. Set aside for 30 minutes.

Pour oil in pot. Drain water out. Put rice in pot. Add salt to taste.Cook for 20-25 minutes. Once rice softens, put off flame. Drain the water out from pot.

Pour oil in pan. Temper with 1 Tsp Mustard seeds. Add curry leaves next. Toss for 1-2 minutes. Add peanuts. Fry them in medium flame for another 1-2 minutes.

Add the pot cooked rice. Mix everything gently. Squeeze juice from lemon. Drizzle from top. Mix gently and put off flame.

Lemon Rice is ready to serve.
