No-Bake Chocolate and Strawberry Cheesecake

I just turned 50 and I wanted something special to celebrate this special birthday.
I made this chocolate and strawberry cheesecake that was delicious, decadent but also light and airy at the same time.
It was the perfect combination!
I am lactose intolerant so I used lactose-free ingredients where I could (like lactose free Philadelphia and yoghurt, soya single cream...). It worked really well. You can substitute with what you are comfortable eating of course.

For the crust: put the Oreos in a food processor and process until you have fine crumbs. Add the melted butter and process again until mixed. Put them in a 9-inch springform pan and press firmly until you have a solid layer.

Wash the strawberries and remove the stems. Put them in the food processor until you have a fairly smooth pulp.

Put the gelatine powder in a small microwave safe bowl with 2 tbsp of water. After 5 minutes put it in the microwave for 10 seconds, until it's liquid.

Time for the filling. In a big bowl mix the cream cheese until it's fluffy. Add all other filling ingreadients (along with the gelatin and the strawberries) and mix well. Taste it and add more sugar if you wish.

The crust and the filling are done. For an extra flavor and crunch I added some chocolate layers. To do that, just melt the dark chocolate with the butter in the microwave.

For the assembly: Add a layer of cream (1/3) on top of the Oreo crust. Pour half the melted chocolate on top, to create a thin layer of chocolate. Add a layer of cream (again 1/3) and pour the rest of the chocolate. Then add the last layer of cream (the last 1/3) and put the dessert in the fridge.

Make the ganache. The easy way is to put the chocolate and the cream in a microwave bowl and melt it. Otherwise you can heat the cream until it reaches a boiling point and then pour it on top of the chopped chocolate. Stir until you have a smooth ganache. Pour the ganache on top of your dessert, to cover it all.

To decorate: after the cheesecake is cooled, take it out of the springform. Cut some strawberries in thin slices and place them around the cheesecake. Decorate with the rest of the Oreos and some strawberries (or however you like).
