Firstly take all the ingredients together take a half kg brinjal n 2 potatoes.

Chopped onion n tomatoes n Coriander leaves, Heat the pan,

Pour oil if oil is hot add mustard seeds cumin seeds n asofetidia n saute for a minutes add chopped onion n curry leaves n salt.

Cook till the onion colour change add ginger garlic paste n mix it well n cook for a minutes.

Add chopped tomatoes n mix it well n cook till the tomatoes soft, now add turmeric powder, garam masala,red chili powder n Nagpur famous Saoji masala.

Mix it well n cook for a minutes after that add roasted coconut 🥥 masala into it n mix it nicely.

Cut the pieces brinjal n potatoes n add into it n mix it well.

Add some Coriander leaves n cover the lid n add top of the plate of glass water n cook 15 minutes after that open the lids sprinkle some Coriander leaves, now our delicious Vidharbha special Nagpuri style Wanga batata Saoji masala bhaji is ready to serve.

Serve hot in a serving dish n enjoy hot with chapati, rice etc. It is very tasty.
