Soak the toor dal for at least 30 minutes. Then wash it nicely. Next take a pressure cooker put the dal, salt, turmeric and water. Put pressure lid and cook for 3 whistles. Let it cool and release pressure.

Next take spinach leaves, clean and chop them small. Take a kadhai, heat oil. Splutter mustard seeds, cumin seeds. Add dry red chillies and fresh green chillies.
Add a dash of hing.
Mix all well. - 3
Next add the garlic and saute till brownish. Add chopped onion and fry it too till translucent.

Next add tomato. Put salt as required. Add a pinch of turmeric. Mix. Add coriander powder, cumin powder and mix well.add little water so that these don't burn.

Next add the chopped spinach leaves and mix. Cook it in open for sometime. Do not overcook.

Now take the cooked dal and pour into the tadka and stir. Add little water as your preferred consistency.

Next put garam masala and mix.
It's ready.... healthy spinach dal...
Have it with rice/ roti/ chapati - 8
