To begin -Wash and soak the chana dal for about 30 minutes.

In a pressure cooker, heat ghee on medium flame, start by adding the onions, saute for a couple of minutes. Add chaana dal and roast it for 2 minutes.

Add tomatoes and cook until mushy. This will take about 2 minutes.

Once it is done, add the remaining ingredients including turmeric powder, coriander powder, red chilli powder, green chilli, spinach leaves. Saute it for about 4 to 5 minutes.

Add salt to taste and 1 cup of water, close the lid and pressure cook the Sindhi Sai Bhaji for 15 to 20 minutes. Switch off the heat and allow the pressure to release naturally.

Open the lid and mash the Sai bhaji using a potato masher to bring it to a mushy consistency. Now again add water as required and slow cook on low flame for about 7-10 minutes.

(2) To Temper -
Heat 1 Tbsp Clarified Butter in a tadka pan add finely chopped garlic cloves sauté until it turns golden brown. Pour this directly on Sai Bhaji and cover it for few minutes so flavors gets infused in it. Sprinkle some red Chilli powder and it's ready to serve. - 8
Serve this Sindhi Sai Bhaji with Sindhi Koki (Sindhi Style Flaky Flatbread With Onions) and Sindhi Bhuga Chawal, Jowar Jo Dodo and Gajar Shalgam Ka Paani Wala Achar for a simple weekday lunch.
