Tomato soup is delicious and very healthy. It's also very easy to make.

Heat 1 tablespoon oil in a pressure cooker. Add the tomatoes, garlic, ginger, black peppercorns, black cardamom seeds, red chili powder, turmeric, salt, and enough water to cover the tomatoes. Cook for 4-5 whistles.

Meanwhile, heat the remaining oil and butter in a pan. Add the finely chopped onions and sauté for 1-2 minutes. Once the pressure releases, open the cooker and transfer the cooked tomatoes to the pan. Cook for 5 minutes. Add cilantro and blend well with a hand blender. Strain the soup.

Simmer the mixture on low heat for 10-15 minutes. Add sugar. Taste and add more sugar or salt if needed. If the soup is too thick, add some boiling water and cook until well combined.

For the croutons, heat oil and butter in a pan. Add the bread pieces and fry until crispy. (You can also deep fry them if you prefer.)

Your tomato soup is ready. Garnish with cilantro and cream before serving.
