Wash the tripe thoroughly with water to remove any unwanted parts. Once clean, soak it in lemon juice and salt for two hours, then rinse well and cut into small squares. Let it drain.

Meanwhile, chop the onion and crush the herbs with garlic and salt. Grate the tomatoes and add everything to the pot with the tripe. Place it on the stove.

Sauté the ingredients well, add enough water, and let it cook for half an hour.
